Potato Soup

A simple crock pot potato soup made with potatoes, broth, cream of chicken, and cream cheese. Easy, warm, and filling.

Ingredients

  • 32 oz potatoes, fresh or frozen
  • 32 oz chicken or vegetable broth
  • 1 can cream of chicken soup
  • 1 block cream cheese
  • Optional shredded cheese for topping

Instructions

  1. Add the potatoes to a large crock pot.
  2. Pour in the chicken or vegetable broth.
  3. Add the can of cream of chicken soup.
  4. Stir everything together until combined.
  5. Cover and cook on high for 4 hours.
  6. After 4 hours, add the block of cream cheese.
  7. Let the cream cheese melt into the soup.
  8. Stir until the soup is creamy and fully combined.
  9. Serve as is, or top with shredded cheese.

Notes

This soup can be made with fresh or frozen potatoes. For a thicker soup, lightly mash some of the potatoes after the cream cheese has melted.
